Using H2O Innovation’s High Brix Technology to Elevate Craft Beer Brewing Processes

In the dynamic realm of craft brewing, staying competitive requires continuous innovation. In 2021, California-based Bottle Logic Brewery, seeking to enhance its brewing processes, approached H2O Innovation, patent holders of high brix concentration technology.

Intrigued by the success of this method in the maple syrup industry, Bottle Logic proposed adapting it for artisanal beer production. A successful pilot project with La Grange Pardue in the fall of 2021 prompted H2O Innovation to submit a proposal for a full-scale machine to Bottle Logic. The Hypermash machine was delivered in the summer of 2022, commissioned in the fall, and aimed to reduce boiling time for strong, dark beers, prioritizing the achievement of the best flavor profile.

This IMPERIAL STOUT is a clever collaboration with Bottle Logic Brewing in California and H2O Innovation in Ham-Nord. Aromas of chocolate and black cherry overwhelm the senses, followed by flavors of caramel, vanilla, and woody maple that captivate the palate. From aging in bourbon barrels, the syrupy and soothing finish warmly coats the throat.
